Instructions:
Prepare the filling:
In a mixing bowl, combine the ground pork, chopped wood ear mushrooms, chopped glass noodles, julienned carrots, chopped shallots, minced garlic, salt, and pepper. Mix well to combine.
Assemble the spring rolls:
– Dip a sheet of rice paper wrapper into a bowl of warm water for a few seconds until it softens. Remove and place it on a clean, damp kitchen towel.
– Place a spoonful of the filling mixture near the edge of the wrapper. Roll the wrapper tightly over the filling, folding the sides in as you roll to enclose the filling completely.
– Seal the edge of the wrapper with a little water to ensure it stays closed.
Fry the spring rolls:
– Heat vegetable oil in a deep fryer or large pot to 350°F (180°C).
– Carefully add the spring rolls to the hot oil, a few at a time, and fry until golden brown and crispy, about 5-7 minutes.
– Remove the spring rolls from the oil and drain them on a paper towel-lined plate.
